RECIPE FOR CHICKEN BIRYANI

In our hotel kitchen, we have fallen in love with Indian cuisine, full of aromas, colors, and harmonious flavors. Our chefs have prepared an authentic Indian menu for you, bringing a piece of the Orient right to the heart of the Slovak mountains. One of our guests' favorite dishes is Chicken Biryani - aromatic rice with spiced meat that will delight all your senses. We bring you a recipe so you can enjoy this dish in the comfort of your own home.

Recipe for Chicken Biryani

Ingredients (for 4 people)

For the marinade:

-500 g chicken meat (boneless thighs, cut into pieces)
-200 g white yogurt
-2 tablespoons lemon juice
-1 tablespoon ground coriander
-1 tablespoon ground cumin (cumin)
-1 tsp turmeric
-1 tsp garam masala
-1 tsp chili powder (to taste)
-salt to taste

For the rice:

-300 g basmati rice
-2 bay leaves
-4 cardamom pods
-4 cloves
-1 piece of cinnamon
-pinch of salt

To finish:

-2 onions, thinly sliced
-2 tbsp ghee or oil
-a handful of fresh coriander
-a few strands of saffron (dissolved in 2 tbsp warm milk)

Preparation

1.Marinating the meat:
Mix the chicken pieces with yogurt, spices, and lemon juice. Cover and let sit for at least 2 hours (ideally overnight).
2.Rice:
Rinse the rice and cook in salted water with spices (bay leaf, cloves, cardamom, cinnamon) until about 70% soft. Drain.
3.Onion:
Heat the ghee in a pan and fry the onion until golden brown. Set half aside for garnish.
4.Layering:
Place a layer of chicken in a pot, then add some of the rice, onion, coriander, and saffron milk. Continue layering.
5.Steaming:
Cover the pot and cook over low heat for about 25-30 minutes, until the flavors blend.
6.Serving:
Serve hot, garnished with onion and fresh coriander. It tastes great with raita or naan bread.
